Wild bass, line caught off the coast of Cornwall. Highly prised for its firm texture and meaty flavour. Packed with umami it is delicious grilled or roasted whole or cut into fillets and steamed, baked or pan fried. It can also be served raw as a deliciously meaty carpaccio or for sashimi.
